Butternut Squash Soup

This uber simple soup is one of my favorites.

Ingredients:

  • 1 medium onion sliced
  • 2 cloves of garlic
  • 1 tsp Sage
  • Bay Leaves
  • Olive Oil
  • Gruyere Cheese – Grated

How-to:

Butternut Squash – I like the pealed and diced stuff from Costco or 2 whole butternut squash peeled and cut up will work as well.

Chicken Stock to cover.

Sautee your onions and garlic in the olive oil, add the sage and cook out for a minute.

Add the butternut squash and cover with chicken stock.  Add Bayleaf.  Put the lid on and cook till the squash is very well done.

Take out the Bay leaf and puree with a immersion blender or in batches with a stand up blender. Adjust seasoning and serve with grated Gruyere cheese.

*** use water or veg stock to make it vegetarian***

Freezes well!
