This is one of my families favorite recipes. It makes a great big batch is easy to double or triple, freezes well and is really yummy to boot.Try it for your next Mexican Fiesta Ole!
- BBQ Chicken – take the meat off the bone
- Small onion diced
- Sweet green Chilies
- Sour Cream
- Enchilada Sauce Mix – your family favorite, I like the Casa Fiesta Brand
- Mozza and Cheddar Cheeses grated
- Tortillas
Cook onions in a little oil till soft add green chilies and a TBSP of the dry enchilada spice mix.
Make up the rest of the enchilada spice mix according to the package directions
Add onions and chilies to the chicken, add a hand full of shredded cheese and enough sour cream to bind everything together and make a nice mixture.
Pour enough enchilada sauce to coat the bottom of a casserole dish. Fill each tortilla with chicken mixture and roll up. Place them all in the casserole dish, pour the remaining enchilada sauce over the top and cover with cheese.
Bake at 350 oven till heated through and cheese is melted
Serve with rice, salsa, guacamole, and sour cream
