I originally received this recipe as part of a Christmas Cookie exchange a few years ago from a good friend and it fast became my go to cookie.
- 1 cup butter
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 2 cups flour
- 1 1/2 cups rolled oats
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups dried cranberries
- 1 cup toffee bits
Cream together butter and sugars
beat in egg and vanilla.
Combine flour, oats, baking soda and salt – gradually add to creamed mixture
Mix in cranberries and toffee bits
The dough is quite dense line a cookie sheet with parchment
bake in a 350 oven for 10 mins or till golden on the edges. Don’t make them to large as they won’t cook properly and press them down a little with the palm of your hand on the cookie sheet.
